Iced tea is an essential menu item. Having first gained international appeal at the Chicago World’s Fair in 1893, iced tea now accounts for approximately 80% of tea consumption in the United States. This course will cover best practices in crafting iced tea beverages at a commercial level. Methods including hot brewing and cold brewing will be explored, and several iced teas will be displayed for cupping. Additionally, iced tea quality control strategies will be reviewed.
